CALLING ALL ARTICHOKE LOVERS!
Easy, quick and very yummy
artichoke and lemon "pesto". Great as dip or spread - perfect for a
cheese board! Or mix with pasta (mix hot cooked pasta with some pesto,
sprinkle with some grated Parmesan cheese)
1 can artichoke
hearts, 1 dl grated Parmesan cheese,1.25 dl olive oil (might have to add
some more), 4 peeled cloves garlic, a handful fresh flat leaf chopped
parsley, 1 tbsp lemon juice, 1 tbsp freshly grated lemon rind, a handful
of almonds or cashew nuts (or both) - add salt and pepper to taste. Mix
all of the ingredients in a food processor until smooth. Enjoy!
