Made with just a
handful of ingredients but so full of flavor. It’s sweet, tangy, and
slightly spicy (good spicy!) and pairs well with everything from cheese,
chicken, fish, burgers to lamb - or use it as a ketchup alternative
(pulse it in your mixer / blender for a few minutes to make it smoother)
- and you will have an amazing dip for your chips (fries)
Ingredients
4 handfulls halved cherry tomatoes (as deep red in colour as you can
find), 0.25 dl maple syrup, a pinch sea salt (½ - or a bit more), a few
turns with the pepper grinder, 1 ½ teaspoons ground cumin, about 1
teaspoon minced fresh ginger, 2 minced garlic cloves, a pinch crushed
red pepper flakes
INSTRUCTIONS:
Add the tomatoes and maple syrup to a medium sauce pan on the stove.
Turn heat on medium-low and cook for five minutes.
Add in the salt, cumin, fresh ginger, garlic, and crushed red pepper
flakes. Stir. Bring the mixture to a boil. Reduce heat, cover, and
simmer for 40-45 minutes, stirring every 5-10 minutes. Let cool and
transfer the tomato jam to a jar or container.
makes about 4.5 dl of jam. Enjoy!!
